Whole Wheat Pancakes
4 eggs, beaten
½ cup oil
4 cups buttermilk or almond milk
4 teaspoons baking soda
½ cups flaxseed meal
1 teaspoon salt
3 ½ cups whole wheat flour

1. In a large bowl mix eggs with oil and milk. Stir in baking soda, flaxseed meal, salt and flour; mix until blended.
2. Heat a lightly oiled griddle over medium-high heat. Pour the batter onto the griddle, sprinkle with nuts and/or chocolate then brown on both sides.
Tip: Cooked pancakes can be frozen once cooled. To reheat, place in oven at 350 degrees for 6-10 minutes, turning them over mid-bake.
