Pesto

Ingredients:
3 cups fresh basil leaves
1 1/2 cups chopped walnuts
4 cloves garlic, peeled
1/4 cup grated Parmesan cheese
1 cup olive oil
salt and pepper to taste

Directions:
Blend together basil leaves, nuts, garlic, and cheese in a food processor. Pour in oil slowly while still blending. Sprinkle in salt and pepper.

Tips:
Pesto is also great made with spinach or swiss chard.

I like to use 3 cups spinach and only 6 or so large leaves of fresh basil for a spinach pesto.

When I use swiss chard, I use 1 cup chard and 2 cups basil.

If you don't have walnuts you can use pine nuts instead.

Freeze pesto in snack size baggies placed into a quart sized freezer bag.
